Ingredients:

  • 1 cup rice
  • 2 chicken thighs (or breast), diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • ½ tsp turmeric
  • 2 cups chicken broth
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Heat oil in a pan and sauté onion and garlic.
  2. Add chicken, season with paprika, turmeric, salt, and pepper. Cook until golden.
  3. Stir in rice and mix well.
  4. Pour in chicken broth and bring to a boil.
  5. Cover and simmer for 20 minutes.
  6. Let it rest for 5 minutes, fluff, and serve.
